The Forest Hill Manchego is a mild, 2-3 month matured cheese which has become a  popular table cheese and an excellent addition to any cheese platter. 

Production at the cheesery is small in volume and the cheeses are all still made by hand with no machinery involved in the production process. This allows for production of boutique style, full flavoured cheeses.
